

Healthy Banana, Almond and Chocolate Ice Cream
Ingredients
- 3 very ripe bananas, peeled, cut into chunks and frozen
- ⅓ cup almond butter (can substitute peanut butter)
- ¼ cup bittersweet or dark chocolate chips
- chopped almond and chocolate for garnish (optional)
Directions
- Place the bananas and almond butter (or peanut butter) into the blender. Begin blending and quickly increase speed to high. Once everything is slightly combined, stop and add the chocolate chips. Turn the machine back on and again increase the speed to high. In about 10-30 seconds, the sound of the motor will change and mounds should appear in the mixture. Stop machine immediately or melting can occur. If using a food processor: In a food processor combine the bananas and almond butter. Process until almost smooth. Add the chocolate chips and process until well combined.
- Scoop into bowls, top with chopped chocolate and almonds, if using, and serve immediately.
Serves two to three.
Note: You can also freeze the mixture to get a harder ice cream, but you may have to let it sit out and thaw for a minute or two before you’ll be able to scoop it.

Yum! Although veggie burgers is a really good alternative to a regular hamburger, I know ordering a veggie burger in some restaurants can be a questionable experiment since a lot times it can be disappointing, so I think I’ll take a whack at making some of my own (especially since these are made with sweet potatoes and avocado which are so yummy and healthy for you too!— benefits HERE and HERE). Sweet Potato Veggie Burgers
makes 7-8 large patties
2 cans cannellini white beans, drained
1 large sweet potato, baked/peeled/mashed (about 2 cups)
2 Tbsp tahini
2 tsp maple or agave syrup
1 tsp lemon pepper seasoning OR Cajun seasoning (or another fave spice!)
1/4 cup wheat flour
optional: additional seasoning (whatever you have on hand - I used a few dashes cayenne, black pepper and a scoop of nutritional yeast)
salt to taste if needed
plentiful Panko crumbs
safflower oil for pan
burgers: avocado, Dijon mustard, grain buns, romaine, onion, olive oil, pepper
Directions:
1. Bake sweet potato. Peel, place in large mixing bowl.
2. Add drained beans to mixing bowl. Mash beans and potato together.
3. Mash in seasoning, flour and any additional seasoning. Your mixture will be quite soft and moist. But you should be able to form a patty. Add more flour or a scoop of breadcrumbs - or dry rice to thicken the mixture if needed.
4. Heat 1 Tbsp safflower oil in a pan over high heat.
5. Form a patty from mixture and coat in Panko crumbs. Thick coating. Then drop the patty in the pan. Repeat until the pan is filled. Cook until browned on both sides. You could also bake. If baking, use less Panko.
6. Transfer cooked patties to paper towel. Cool for a few minutes.
7. Serve on toasted bun with lotsa toppings.
Note: yes this patty does fall kind of apart as you eat it. But that is OK because it tastes yummy.

Riia’s Vegan Banana Nut Muffins
*Altered from this recipeIngredients:
3 Ripe Bananas (mashed)
3 tbsp Olive Oil
2 cups flour (aim for healthier flours…no white flours!)
3/4 cup Sugar (or applesauce as a substitute)
1 tsp Baking Soda
1 tsp Vanilla Extract
3 tsp Cinnamon (or desired amount)
1/2 cup Walnuts (optional)How to:
Preheat oven to 350. Mix mashed bananas with olive oil. Add in flour, sugar, baking soda,vanilla extract and cinnamon. Blend using an electric mixer until smooth texture. Stir in walnuts.
Pour batter into desired pan. I chose a cupcake tray because it makes portion control easier!
Cook for about 30-60 minutes, depending on pan size! Enjoy :)

Cold Vegan Pasta Salad
This recipe does not really have any specifics when it comes to the veggies. You can throw in as much or as little as your heart desires! :)
Ingredients:
1 package whole grain pasta noodles (any type of noodles will work)
Mixed peppers
Green Onions
Shredded carrotsHow To:
Boil noodles until noodl-y, drain, rinse with cold water and cool. While the noodles are cooking, slice up peppers and green onions into small pieces. Finish by tossing cold noodles, shredded carrots, green onions, and mixed peppers into a bowl. Top it all off with an Organic Italian Dressing! Enjoy!Store in refrigerator :)
